Texas Recipe ⊶ Texas Hash in the Microwave

One of my favorite meals growing up. I have only change up a couple of things to suit my family. The kids love it! And it's super easy and fast.

Texas Hash in the Microwave

Ingredients

  • 1 pound ground beef
  • 1 tablespoon minced garlic
  • 1 ½ teaspoons tomato, garlic, and basil seasoning blend (such as Mrs. Dash®)
  • 2 (14.5 ounce) cans no-salt-added stewed tomatoes
  • 1 cup instant white rice
  • ½ onion, chopped
  • 1 teaspoon dried minced onion, or to taste
  • ¼ cup shredded mozzarella cheese, or to taste

Cooking Directions

  1. Crumble ground beef into a 3-quart glass, microwave-safe, casserole dish; mix in garlic and seasoning blend. Cook on high, stirring halfway through, for 5 minutes. Drain.
  2. Mix stewed tomatoes, rice, chopped onion, and minced onion into ground beef mixture. Cover and cook on high, stirring halfway through, until rice is cooked through, about 20 minutes. Let stand, covered, for 10 minutes. Stir and add mozzarella cheese.
You can also add 1/2 green pepper (chopped), 1/2 cup chopped mushrooms, and 1 can of low-sodium cream of mushroom soup; Any variety of cheese can be used in place of the mozzarella cheese.
